BAK 105 - Mixing I 3 Credits Many professional bakers consider mixing to be the most important step in the baking process. Although not overly complicated, it does require a great deal of care and accuracy. Mixing dough involves four distinct stages: scaling, ingredient incorporation, dough development and checking temperature after mixing.
Prerequisite(s): CUL 105 with a 1.0 or higher
Course Outcomes
- Demonstrate knowledge and functions of ingredients used in production of yeast doughs, cookies and cakes.
- Identify the effects of different mixing methods.
