BAKS 111 - Saturday Baking Series 3

This is an excellent series for either the accomplished or the aspiring home baker, offering a lot of new material and good practice under the experienced eye of a talented pastry chef. Join Chef Hope Sandler for this 3-part baking series that will focus on the process pastry chefs practice daily - using master recipes and techniques as a springboard for developing new desserts - homey, comforting and dazzling! With Chef Hope at your side in the bakeshop, she will share her philosophy of dessert preparation and reveal the methods of professional pastry chefs, resulting in your ability to create deeply satisfying, classic and contemporary sweets. Themes in Session III include: holiday desserts; playing with chocolate for chocolate leaves, piped messages, fancy filigree, glazing and marbling chocolate tortes, chocolate truffles “Cocolat” style, chocolate ruffles, cigarettes and shavings; caramel techniques for angel hair, caramel cages, shards, sticks and so much more! Please bring a clean apron and dry measuring cups with you to class. Supply cost is included in the tuition fee.
