CULS 178 - Italian Trattoria Cooking

Credits 1
Join Chef Hope Sandler in this delicious 3-part series where you will learn about Trattoria cuisine - foods prepared from scratch, by hand, using traditional techniques and enjoyed in the small, cozy restaurants of Italy. Chef Hope is accomplished at teaching traditional Italian cooking and baking skills while still making it possible for even a novice to create delicious, high-quality dishes. With Chef Hope as your guide, you will explore the art of the antipasto table; risottos stirred stove-top or oven-baked; hand-crafted fresh ricotta cheese for ravioli, bruschetta, baked casseroles and sweet desserts; handmade pastas; pizza, calzone and focaccia dough blending, kneading, rolling and exploring an enormous range of filling possibilities. Chef Hope will coach you through the Italian pantry and inspire you to express your culinary creativity for winter and holiday Trattoria style meals. Please bring a clean apron and chef’s knife with you to class. Supply cost is included in the tuition fee.
