CULS 177 - Asian Noodle Workshop

The broad and ever-increasing availability of Asian ingredients has made it easy for Americans to enjoy the wonderful, diverse foods of Thailand, Vietnam, Japan, Singapore and China. In this 3-part series, Chef Hope Sandler will teach you how to work with fresh herbs, aromatics and several different noodle types to create a multitude of flavorful dishes. You’ll learn how to select, shop for and prepare each type of noodle. With Chef Hope at your side you will learn about Asian tools, the techniques of stir-frying, steaming and braising, and create signature dishes of Asia that can easily be recreated in your kitchen. Sample menu: Thai stir-fried Noodles with Prawns (Pad Thai); Chinese Hunan crispy Noodle and Chicken Salad; Vietnamese charbroiled Beef over Rice Noodles (Bun Pho); Singaporean pan-fried Ribbon Noodles with Garlic Black Bean Sauce; Japanese Soba Noodles with Tempura Shrimp and Vegetables (Mee Gorent). Please bring a clean apron and chef’s knife with you to class. Supply cost is included in the tuition fee.
