CULS 169 - Simple Yet Delicious Cuisine

Chef Joshua Henderson has worked in many facets of the industry, from Executive Chef for Boeing’s Executive Boardroom, to cooking meals for Tom Cruise, to preparing restaurant quality cuisine on a two-burner stove in the middle of the desert for a photo shoot. He currently is the Chef-owner of 212 Degrees Catering in Los Angeles, where he cooks restaurant quality and seasonally focused cuisine for the crews of fashion and advertising shoots. The cuisine will focus on an array of cultures from pan-seared halibut with lemon zest risotto and golden beet salad to massaman duck curry with basil scented rice and crispy potstickers. The focus of the class will be to concentrate on process, general cooking skills, and seasonality. We will focus on the main techniques of cooking from sauteing to braising, which will enable you to interchange ingredients from each season as you master each process.
